Jamon Ibérico is one of Spain's treasures. The thin slices of dark red ham have a deep, complex flavor and a surprisingly mild saltiness. Once only available in Spain's finest restaurants, you can now enjoy this incredible ham in your home. Each ham is cured in the mountain air for over three years, experiencing the changing temperatures of the seasons. Under the watchful eye of the ham masters at Arturo Sánchez, the hams cure in special curing rooms with open windows to allow the mountain air to circulate, and eventually lose over 40% of their weight as much of the fat melts away. This type of Jamon Ibérico is most commonly served in Spain. It is made from the native cerdo ibérico black pigs that are fed a diet of high-quality grain. Cured for 36 months by the masters at Arturo Sánchez, the resulting jamón is dark ruby red, with streaks of white fat adding flavor and texture to the slices. Hams are generally classified by the amount of acorns eaten before curing.

Hello, Second time I've ordered from you, and I'll def be back for more... however... two small issues with this most recent order (iberian ribs and cured presa, among others). The cured presa... admittedly, I've never had it before so this is just a question... the coating on the outside seemed a bit more green and mildewy than expected. Perhaps that's normal? Still tasted pretty good. RE the ribs.. one of the two packs you sent included a piece that was essentially just the spine of the pig. Not much meat at all, and no ribs that could be separated and served/eaten separetly. just one big piece of bone. Not so great. The other pack was marvelous, however. As I said, none of this is going to keep me away from further purchases - just questions/feedback for you. Thanks! BTW, I hope this brexit doesnt cut off your supply of Iberian Pork!!!!
