Gamba Roja prawns are a delicacy from the Mediterranean sea and East Atlantic Ocean. They are scientifically known as aristeus varidens and are prized for their delicate yet flavoursome taste. Locals in Denia, a town in Spain, particularly enjoy these prawns, thanks in part to the influence of 3 Michelin-starred chef Quique Dacosta. He recommends cooking them in seawater to preserve their sweet taste and plumpness. Each kilogram of Gamba Roja prawns contains between 25 and 30 whole, head-on prawns, individually quick frozen on the boats to ensure their freshness.
