Carabinero prawns, also known as Scarlet Shrimp or Cardinal Prawns, are a large deep-sea prawn species found in the Eastern Atlantic and Mediterranean Sea. They are renowned for their jumbo size and striking bright red colour, which remains unchanged when cooked. Carabineros are more distinct and robust in flavour than other shrimps or langoustines, and their large size makes them a popular choice in professional kitchens. The meat is mainly concentrated in the tail, but the cephalothoraxes (head and body) are also edible and can be used to make clear and creamy sauces.
