Caviar Nacarii, a food item, is sourced from sustainably grown Siberian sturgeon in the clear waters of the River Garona, Val d’Aran. The caviar is never pasteurised, allowing it to evolve with age and offer a rich, varied taste experience. The roe has a standard size with a diameter of 2.5 to 3 millimetres. Caviar Nacarii follows the natural cycles of the female sturgeon for two annual extractions in spring and autumn.
