Agusti Torello Mata Balsamic Cava Vinegar is made from sweet cava that is aged between 12 and 16 months. The cava is then transferred to oak barrels, filled up to 2/3 of their capacity. This creates a surface for acetobacter, a bacteria that transforms alcohol into acetic acid, to form a veil. The vinegar is aged for an additional 2 years in these barrels to produce its unique flavor. This white, fresh and citric balsamic vinegar is delicate yet vivid, bright and refreshing. It is ideal for vinegar reductions, game, spicy carpaccios, Asian cuisine, salads, and desserts. Pair it with vanilla ice cream or any Mediterranean dish for an excellent culinary experience.
