Butifarra is a traditional Catalan sausage, made from raw pork meat, salt and pepper. There are now many different versions of butifarra, including white and black cooked butifarra, herb or truffle flavoured and even a sweet one too. Cooking butifarra is best done on the barbecue or on the plancha, and it's often served with salads, potatoes or a slow cooked chickpea stew. When you receive your butifarra, you'll get one frozen sausage delivered on ice pads. If you're not using it straight away, store it in the freezer. If you do use it immediately, thaw it in the fridge for at least 24 hours before cooking.
