Morcilla de Burgos is a popular Spanish black pudding from Burgos in northern Spain. Originally, rice was added to bulk out the sausage, but its unique flavor became a signature dish. Morcilla de Burgos pairs well with roasted apples and piquillo peppers, but it's versatile enough for experimental chefs to use in various dishes, from pasta to poultry, game to garnish. “This is the black pudding to serve to people who don't like black pudding! Because it is full of rice, it has a firm texture that allows it to be nicely fried. No need for any fat - just put thick slices in a pan and cook until both sides are crunchy - that is the other advantage of rice, the crunch. Perfect with a tomato sauce or, even better, red peppers sautéed to softness with olive oil and garlic. I have served this to British people who were surprised when they found it was a black pudding. The light spicing was also a revelation to them. Delicious and great value.”

“Arrived next day (super speedy!) kept cool and fridge-ready on ice. Can't fault the service levels from Basco. Eaten as part of a recipe for Arroz al horno (baked rice) and it was perfect. Went down very well with all the family. Very impressive and will continue to use Basco for our Spanish foods. Recommended.”

“I’ve now had two morcillas de Burgos from Basco. They have been excellent. The Spanish black pudding is much better than the English version (with its lumps of fat). My three orders from Basco have all been very good both in terms of delivery and the quality of the products.”

“Beautiful black pudding, delicate flavour and texture. I’ll be getting this again!! Also fantastic as gluten free so I can safely give it to a friend who is a coeliac. Will have to try it with scallops as I don’t think it would overwhelm them like most black pudding does.”
