Morcilla de Burgos is a popular Spanish black pudding from Burgos in northern Spain. Originally, rice was added to bulk out the sausage, but its unique flavor became a signature dish. Having visited the area for work it was great to fin this quality from Basco, it really is great with fried eggs and potatoes, do it like I have had it in Spain cook up a load and then place in a bowl or serving dish and slice through all three ingredients and share with friends or family. Great dish.

I have always been a fan of English black pudding, French Boudin but I especially like Spanish Morcilla and this one with rice is exceptional an essential part of any tapas spread

Easy to slice and stays together well when cooked. Lovely flavour and I enjoyed the addition of the rice.
