Morcilla de Burgos is a popular Spanish black pudding from Burgos in northern Spain. Originally, rice was added to bulk out the sausage, but its unique flavor became a signature dish. Love, love love morcilla. Sliced, and then pan fried or baked in the oven for a few minutes til crispy. Fabulous.

This took me back to walking the camino de Santiago. Authentic and much more sophisticated than some of the bocadillos de morcilla served in small bars on the way
