Our 1kg Basco Fresh Cooking Chorizo, made by Martinez Somalo in La Rioja, is a soft and moist sausage with a crispy exterior. With over a century of experience, this chorizo is semi-cured for just four days, allowing it to retain moisture while becoming crispy. The secret to its signature taste lies in the premium quality Spanish paprika used. This versatile ingredient comes with a three-month shelf life and is perfect for various cooking methods. Its vibrant color, soft texture, and spicy, aromatic taste are reminiscent of the traditional Riojan Chorizo, which was originally produced in the mountain valleys of La Rioja due to the ideal curing conditions. Since 1990, Riojan Chorizo has held the I.G.P. accreditation to protect its production.

Very tasty. It's proper cooking chorizo that releases a lot of flavour into the dish, which doesn't happen with other types of chorizo.

Great price, great product, an absolute staple in our household. Lovely on the BBQ, cooks well in an airfryer, it's superb run through stews, cassoulets, paella or even chucked through a salad with some roasted courgette.

I find it difficult to get cooking chorizo where I live, so always order a few kilos and keep them in separate bags of a few sausages in the freezer. Love the taste of these, be it in the paella recipe from the Basco website, grilled as 'normal' sausage, or cut up and added to stews or casseroles.
