Pago Los Vivales is a farm with 120,000 square metres located Northwest of Castilla y León in the town of Coreses province of Zamora. Their 3,000 sheep produce milk that is continuously selected to ensure the best possible product quality. Feed is produced at the farm itself, using barley, alfalfa, corn, soya and straw, with all these products undergoing checks to ensure their quality. Different milk mixtures are made to ensure the best possible balance, depending on the animal’s stage of gestation and development. Made from 100% raw sheep’s milk, Pago Los Vivales Gran Reserva is a Zamorano cheese matured for over 16 months, giving it a uniform and firm texture that cuts cleanly, with small mechanical holes. It still has a melt-in-the mouth texture despite its age. It has a strong, elegant and aromatic flavour that is very long lasting.
