Made this last night for a dinner party, huge success! Everyone raved about it. I followed the instructions as is, I was worried there wouldn’t be enough liquid for the couscous but it turned out perfectly. My salmon was skinless and not very thick so it cooked in 15 minutes. Will definitely make again.

Quick to prepare, quick to bake, minimum washing up, so healthy and so tasty and surprisingly filling. Generously serves 6.

Lovely flavours and colours but prepared without using the oven. Sauté different veg in a lidded wok with a bit of olive oil. Blitz the tomato sauce ingredients then add to a different pan, with the chickpeas and couscous. Once hot, place the prepared salmon on top, lid on and after about 5 mins, everything cooked through and ready to serve.
