Kerala roast chicken & curry sauce Reviews

I did this in the oven as I only have a single drawer air fryer and it came out delicious. I used a roasting dish with a wire rack so the chicken was elevated. Unable to find Kerala paste so I used tandoori instead, mixed with 3 tablespoons of olive oil. Some of the chicken peas dropped through wire track and they were the most tasty chick peas I have ever had. Fed 6 adults easily. I did serve with garlic paratha’s as well as poppadoms, lemon mint yoghurt and mango chutney. Will certainly make again but next time with extra chilli.

We couldn’t get the keralan paste so used korma instead. It worked really well and our family loved the chicken. However, the cauliflower was incinerated so we were left wondering if there was a typo there. Thinking about it, 50 mins at 200c for a cauliflower seems a bit much. We have a Ninja dual zone air fryer. We used the chickpeas though and the sauce was lovely

Hi. I cannot wait to try this but have a small problem with the ingredients. Can I use another curry paste with this recipe please as I cannot find a keralan paste to make it ? This sounds delicious and I cannot wait to make it.
