That’s the squash you use. And you can save the seeds to make into a snack. Recommend warming the walnuts in a dry pan before sprinkling over. The leeks are just a stroke of genius for this recipe. “A great dish, however please can you advise where I can purchase the correct large giant squash as cannot find in any supermarket. Please also advise which tools you used to move the giant squash from the baking pan to the serving plate as mine collapsed as bottom was too thin.”
