“The stuffing in the thighs was delicious and the potatoes cooked with them were soft and so flavoursome, but with a slightly crispy top. The only negative was that there was no way that filling was staying contained within the chicken, I didn't have string but tried cocktail sticks (I don't think even string would have worked). In the end I wrapped the thighs in bacon to seal them up. Also the carrots were still rock hard after 20 minutes roasting, so for the one that needed smooshing up for the gravy, had to blend it all instead.”
