“Easy to make as a get rid of it dinner using a cauliflower and cupboard ingredients. Healthy and a mid-week dinner win in our house. Could add peppers or other veg to make more interesting. Definitely needs more seasoning throughout cooking. Nice one for the lunchbox tho.”
“I found the lentil and beans unbelievably sweet. I drained the whole lot and rinsed it. I added some stock and curry paste instead. The cauliflower would have burnt if I had left it in for an hour. I managed to salvage it but without making the changes the whole dish would have been burnt cauliflower on lentil jam”
Hi Chloe – so sorry to hear that this didn't work for you. The cauliflower should be a nice dark golden colour, but all ovens are different. If your oven runs hotter, feel free to cover the cauli with foil or reduce the heat. You can also take the sweetness down by reducing the amount of mango chutney. Hope that helps!
