“I was skepical about this because it didn't seem that it would be tomatoey enough. It was lovely and myself, my husband and my 16 year old daughter had seconds. She never gets seconds! I used butter beans and chickpeas (because it's all I had) and savoy cabbage and kale. Really good. Would definitely make again.”
“I have to be at work at 6:45 AM and cannot eat a big breakfast. I make a batch of this soup once a week and have a bowl for breakfast with tea, toast and a banana. It is not heavy but keeps me full until lunchtime. It is easy to make. I do it a bit different though. I use vegetable broth instead of water and bullion. And I find the crushed tomatoes makes it too tomatoey. So I use a can of diced tomatoes instead. But it has been a lifesaver.”
