“I mangled this recipe. A lot. 1)I forgot to add mustard when mixing loaf so I spread it over the loaf after formed, then added bacon on top. 2) I left roasted fennel pan on the counter while answering door and came back to no fennel and a dog licking his chops. 3) I thought we had black current jam. We did not. I substituted fig jam.
And it still tasted amazing! Served it with snap peas and mashed potatoes. I halved the recipe with no issues. And the gravy was delish! Added to my recipe book, this one is a keeper.”
“Made this for dinner this evening after finding the recipe in my notes. Saw it on Jamie’s show and it looked so good so I jotted down the recipe. I made one small change and used mild Italian sausage in place of ground pork. The meatloaf was moist and savory. The roasted fennel was sweet and delicious. A perfect pairing with the meaty and savory meatloaf. Delicious!”
