“I just made this and it’s so simple and didn’t have to worry too much about exact measurements!!! Yes, lots of chopping prep, but amazing flavours. Since I didn’t have the all the veggies that were listed (leeks, courgettes, squash) I substituted with 2 parsnips, 2 jalapeños, and green onions…turned out great! Then with the extra sauce, I portioned it out and popped it into the freezer. Perfect! I love recipes that still work even when you have to substitute, however, though this turned out great, I do want to make it again with the veg listed in the recipe.”
