Skipped the star anise but did the rest, made it it's Xmas eve. I BBQ the turkey so don't have pan juices to work from so this was an easy way to get great gravy. On the day just took the jug out of the fridge, dropped the jelly'fid gravy/stock into a pan and left on a low heat 20mins before dinner. Then poured into gravy jug and served. Did think 2l water was too much, but actually worked fine, ended up with 1.2l ish gravy.

Im a big gravy fan and have been making what I consider to be good gravy for many years, as taught to me by my mum, who is a retired chef. However, I made Jamie's get ahead gravy for the first time last Christmas and am so glad I did. It's absolutely delicious and so easy. highly recommended.

I make this every year and then wonder why I don't make it for every roast! It is delicious and so easy to make and transforms a meal from lovely to sublime! Easy to follow and worth doing!

Excellent gravy. I used chicken wings and when cooked removed the bones and star anise etc. I then blitzed the remainder and after sieving was left with a great bowl of thick soup, which I will freeze or add to or both.

I make Jamie's "Get ahead gravy" every year. It always turns out perfectly and takes out so much stress on the big day.

I will be completely honest here. I couldn’t cook at all until Jamie saved me and my family from starvation! Haha! This gravy is amazing but I would just like to say that if you don’t like aniseed (Even a hint of it) do NOT use star anise. It does over power the gravy. I have made this successfully for the last few years without it and it is absolutely fantastic. Thanks Jamie. Wishing you and yours a very happy festivities and I hope you don’t take this negatively. Had to use chicken thighs as was all that was available and couldn't obtain any sage but followed the rest of the recipe and it's delicious. The star anise really adds that little bit extra, Looking forward to finishing off with the cranberry sauce and turkey juices on Christmas day.

Get Ahead Gravy is just what you said it would be, a game changer and as I agree that gravy can be and often is the most important part of a turkey dinner, I am really pleased. I roast smaller turkeys now that I am retired and I find that there often aren't enough 'bits' to make a tasty and nicely browned gravy. This recipe is packed with flavour and in the freezer for this Christmas. I followed your recipe closely, using chicken wings only, but used a few whole cloves 1/2 tsp, instead of star anise (which I didn’t have in the pantry). That is a brilliant touch, to get a richer flavour, but not alter the taste. Thanks very much Jamie Oliver and a Happy Christmas to you and your lovely family this 2024.
