Courgette salad with mint, garlic, red chilli, lemon & extra virgin olive oil Reviews

Just a quick remark. I was very busy one evening and wanted to use up some courgettes and at the same time make a salad. I came across Jamie's page, saw the ingredients and thought, perfect! So, off I went chatting with my kids and cooking at the same time. I made the recipe above but hadn't thought to read the instructions, after all it's a salad. Everyone really loved the the salad, delicious, refreshing, tangy, slightly spicy, perfect. It was only later that I read the recipe and discovered that you're meant to lightly grill the courgettes! So, the moral of this comment is, why not just make this recipe with raw courgettes, it's really very good, and (as you can guess) even easier to make.

I made this salad but I added some charred tomatoes ,that needed to be used because they were overripe, with the skins removed and baby arugula. The tomatoes made a lovely juicy dressing and the arugula gave it a touch of pepper.
