Organic Spelt couscous is made from an ancient grain.
Organic spelt couscous is made using traditional spelt which is milled down to these speck like grains. Spelt couscous contains the hull of this ancient grain so is higher in a range of nutrients than regular couscous but it still cooks into a light fluffy consistency.  One 120g serving is high in selenium.

Organic Hulled Spelt grain is an Ancient cereal grain which is closely related to wheat.  Spelt is considered ancient because it was first cultivated 9000 years ago.  Many people prefer Spelt to modern wheat because its DNA has not been changed by farming methods and it has a more extensive nutritional profile.

Couscous makes great tabbouleh and is perfect for hearty salads and side dishes. Organic spelt couscous is a natural whole food option for couscous lovers, it is harder to find than wheat varieties but it can be used in recipes in the same way.

To make couscous the spelt is moistened and then sprayed into a special oven which helps form the little particles of couscous. The particles are partially cooked under steam, dried and then gently cracked into smaller pieces.

Couscous is similar to pasta in some ways but it is lightly crushed instead of ground so it is less refined.  It is particularly popular in Middle Eastern and North African cuisines but can now be found almost anywhere - although spelt couscous is less common.

Couscous as expected. Packaging needs thought as to how plastic will be avoided in the future. I reuse the bags (I freeze items then pop them out of tubs into these bags) but the bags don't seal and I now have an awful lot in use in my freezer plus many spares. I will now start to look elsewhere for a supplier who is thinking about plastic waste - even though this will cost me more (I will eat less and even more healthily to pay for this as I have some spare flesh!) It's all very well worrying about pesticides etc but we need to worry about the plastic bags too as it's all connected! I know this isn't easy when you are worried about mung beans loose in parcels and spillage, but there really isn't another option other than we start to resolve this (in my opinion). I will now look for a store that sells these items loose and vote with my wallet if nothing is done (sorry). Otherwise the service is fantastic - good information, easy ordering, delivered in a fair timescale, sturdy box (which I can reuse and can pass on to those who are moving house to reuse again) - just unfortunately too many not-very-useful plastic bags!
