I purchased two of the Sakai Takayuki VG10 knives with American Cherry handle. The knives are excellent quality. They look superb and I've been using them for a while now. They are extremely sharp indeed, just what I wanted and they make short work of cutting just about anything as you'd expect. They handle very well indeed and while I am very careful, one of them did bite me, just the once. These are by far the best purchase I have made with respect to knives. I'm not sure how long they will keep their sharp edge but so far I'm impressed. The only downside for me was the cheap plastic sheath they came with, for the price a more robust one would be expected.
