I usually use oak in my wood fired oven but a friend recommended birch. I bought a large crate but after a few cooks, it is really dreadful with continuous thick black smoke and soot. I have tried removing all the bark (there is far too much bark in the crate) but it’s still really poor and virtually unusable. If I could return it, I would. To be fair to LWC, my previous order of oak was fantastic. Bad batch maybe?
