The advice about defrosting could be a bit clearer, as we left the goose in the plastic bag in the fridge and it felt a bit wet and soggy to handle, although it cooked fine. There were still quite a number of feathers on the wings needing attention, which our previous supplier (now retired) never left on the bird.
