A bit disappointed with this knife. The balance point is too is awkwardly forward positioned resulting in an uncomfortable grip. I didn't like the thickness of the knife and preferred if it were thinner. Otherwise, the knife is very sharp and the knife patina looks amazing

El acero del que está hecho este cuchillo és uno de los más duros del mercado (HRC 67). Debo decir que tengo otros cuchillos artasanales japoneses y este me ha sorprendido por el grado de afilado que tenia de fabrica, pero además, al haberlo afilado por mi a mano alzada en piedras ...... es lo mas filoso que he tenido nunca ! Estupendo. El rpoceso de compra a través de la pagina web ha sido facil y claro, y he recibido el paquete en casa a través de Correos sin ningun problema.

Spent a while finding somewhere to purchase my first Japanese knife from and couldn’t be happier that I chose Cutting Edge. No complaints at all and the knife itself is brilliant, very sharp (thanks for the plasters, didn’t take long before I needed one!), gorgeous blade and well weighted. It’s definitely made a difference for me, having a quality knife, and my next one will be from here too.

Edge retention is unbelievable. Sharpening does require a bit more work but it's not something that you'll need to do often. You can get this extremely sharp and it'll stay sharp for a long time. A honing rod and strop keeps this ultra sharp in between sharpens. ZDP189 really is a superb knife steel. Highly recommended .
