The blades look stunning and are certainly eye catching. The 17 layers of stainless steel on each side are hand ground to reveal each one in turn like tree rings. The hammered dimples are a by product of getting the layers to bind together but leave the blade with this wonderful finish.

I've only used it once so far, but it really did just glide through my onions and tomatoes. It has a lovely weight to it, and looks great as well.

I ordered a Santoku, but unfortunately it arrived damaged in transit, nothing to do with cutting edge knives. Cutting edge knives were brilliant in responding. They'd sold out of the Santoku but offered the gyuto which is very similar. I'm very happy with the knife. It's beautiful. And very happy with the service from cutting edge knives. They have been brilliant.

I bought the Sakai Takayuki Moonlit Waves Santoku from CuttingEdge Knives. The knife itself looks most attractive with a Western-style wooden handle and beautiful patterned blade. It is the sharpest knife I have ever used, consequently, it cuts and chops better than anything in my experience. A really excellent, beautiful and effective knife.
