As a food culture, we’ve become used to sheep meat being eaten as lamb – that means the animals are slaughtered before they reach 12 months of age. Mutton comes from older sheep (most often ewes) reared to older than two years. While this meat has punchier flavour than lamb, it’s not off-puttingly strong as some people think and it certainly isn’t chewy. It’s a mature meat, certainly, but when cooked well, mutton’s juicily sweet and distinctive.
