“I bought the baking trays to bake small focaccias during my Italian baking class as I wanted each participant to take one back home with them. I have encountered a problem with using them though, which is rather obvious. Wood is insulating material (until it burns, that is) therefore the bottom of the focaccias were too white and uncooked when compared to the tops, which were browning too fast. I think possibly one needs to take the focaccias out of the marquis half way through baking to complete on a metal tray to have an even final result.”
