“As there is no information for the protein of this flour, I have made a trial sandwich bread using this flour with bread flour if different brand. I find this flour absorb more water than I expect. And the protein level may be a bit lower than all-purpose flour. So it may be helpful for adding some malt extract to promote the rise if you want to make sandwich bread. Even so, the flavour of the bread is still good and the texture is a bit dense but tender.”
