I think it works well on straight wheat doughs. When we use it on whole flour dough, it will become "damaged" soon.

Ideal for scoring bread dough ,hot cross buns and many other baking types of dough .

... I cut my finger when I first removed it... and whatever you do don't attempt to replace it!

This little knife was a freebie with my order. I found it a bit flimsy; the little shield came off pretty much immediately. However, it did score the dough quite well, but I prefer my usual lame which is more substantial.

The dough scoring knife is a bit flimsy. I should have bought a more expensive one. However, I'm quite happy with the results. I bought the cheap one, as I've never used one before and just wanted to see if scoring my bread made much difference. When I need another I know it will be worth while getting one that is more expensive but more sturdy.
